I LOVE SALSA, but add a hint of sweet mango to it and I'm absolutely DROOLING!
I've been in somewhat of a recipe slump- nothing really sounds good, low motivation, my oven is broken, and I'm just bored! Really, I have the broken oven to thank for this deliciousness because I needed to get creative in order to make a dinner without my most valuable kitchen appliance!
By the way, any bets on how long I'll be out of an oven?! I'm dying to get back on my blogging game.. perhaps I need an oven-less series of recipes! We also didn't bring our grill from our old house to our new one, so basically, either raw or stove top meals...
Anyways, in true Tess fashion, I needed my weekly salmon fix and I needed it... yesterday. Sprouts had some deal on mangos (buy 5 for the price of who knows what) and I fell victim to the marketing! But, what the heck do you do with FIVE mangos? Well, baby food for one. Annnnnd MANGO SALSA for two.
No chips, though. I'm on the straight and narrow after our all inclusive vacation to Cancun in addition for 4 straight weeks of travel. Lack of routine and clean eating has me feeling like a blow fish!
I digress. BLACKENED SALMON TOPPED WITH MANGO SALSA. If I had to eat one food for the rest of my life, this is now the top contender!
Savor every bite of this because once it's gone, you'll want to cry.
Prep: 10 minutes
Cook Time: 10 minutes (if you're making it for the SALMON)
- Chop all mango, tomato, avocado, bell pepper, onion, green onion, cilantro and mix in bowl.
- Add the juice of half a lime.
- Add salt, pepper and chili pepper to taste.
- Use it as dip or topping on salmon or chicken.
- 1 Mango
- 1 Tomato
- 1/2 Avocado
- 1/2 Lime
- 1/2 Green Bell Pepper
- 1/4 Red Onion
- 2 TBSP Chopped Green Onion
- 2 TBSP Chopped Cilantro
- Salt to taste
- Pepper to taste
- Dash of Chili Pepper (secret ingredient!)
