Double Chocolate Quinoa Brownie

Calling chocolate lovers all over the web! This melt-in-your-mouth (literally) brownie is everything you've been looking for to get in your brownie fix without completely ruining your lifestyle changes. It's healthy, it's sweet, it's good AND IT'S CHOCOLATE.

We are heading to Temecula this weekend and I always try to bake treats to bring along for the ride (that is if they last that long). We've got two days until we leave, so I'm going to have to channel some inner self control so they live to see Thursday afternoon! I mean, I've already eaten 2 and there's only 6 per batch....

Anyways!

The main ingredient is quinoa and in recent years, our little friend quinoa has grown in popularity by ranking high on the "superfood" list. I'm really not sure the exact criteria of what makes a food a "superfood" or who actually deems superfoods as that, but it sounds super cool. So, main ingredient: quinoa the SUPERFOOD! And I like this for a few reasons, quinoa is a complete protein {contains all essential amino acids}, which might not mean much to you but to your veggie friend over here {thats me!} it means everything! 

What you can expect: I'm going to be as transparent as possible because sometimes people are off their darn rocker and expect a HEALTHY sweet treat to taste like confetti birthday cake with frosting on top. So, this little gem of a square is nutty in flavor, soft with tid bits of quinoa crunch, sweet, chocolate-y and has chunks that melt in your mouth with each bite. It's delicious straight from the oven and just as good after being refrigerated!

Prep Time: 5 Minutes

Cook Time: 20 Minutes

Servings: 6

Directions:

  1. Preheat oven to 350 F.
  2. In a large bowl mix together peanut butter, eggs, coconut sugar, cacao, vanilla.
  3. Add quinoa, oats, baking soda and chocolate chunks.
  4. Mix together and pour into 9x13in baking pan.
  5. Bake for 20 minutes.

Ingredients:

  • 1/2 Cup Quinoa
  • 1/2 Cup Oats
  • 3 Eggs
  • 1/4 Cup Peanut Butter
  • 1/4 Cup Coconut Sugar
  • 1/4 Cup Cacao Powder
  • 1/4 Cup Chocolate Chunks
  • 1 TSP Baking Soda
  • 1 TSP Vanilla Extract
