Carrot Oatmeal Spice Cookies

Cinnamon spice and clove aroma diffused through the air making my mouth water with each passing minute. I opened the the oven for a little peek. From the sights and smells of it, these cookies were going to be GOLD on the first go round. 

Baking isn't like cooking. You can't just throw it together and have it turn out perfectly. I've been flirting with it enough lately that I'm beginning to understand consistency, texture measurements enough to not only NOT botch the entire recipe but ACTUALLY make it DELICIOUS! 

As if baking isn't hard enough, I challenge myself by NEVER using sugar or artificial sweeteners. All guilt-free sweet treats are naturally sweetened with fruit, dates or honey and topped off with the occasional chocolate chip. 

These cookies are soft, chewy, moist and SLIGHTLY sweet. Best of all, you can indulge in them guilt-free. They've got fruit, vegetables, oats, fiber and plenty of other healthy benefits to deem them as a perfect breakfast option!

If you're on the road to health and struggling with carb or sugar cravings, making healthy versions of your favorite things is a good place to start. Will they ever be as sugary and delicious as that store bought, sugar filled, artificial ingredient cookie? Maybe not. But soon enough, you'll prefer the REAL food. I've always got ingredients on hand to whip up some healthy sweet treats! As far as baking supplies, I suggest filling your pantry with oats, coconut flour, dates, flax meal and almond flour. Prep Time: 20 Minutes

Cook Time: 15 Minutes

Servings: 14 cookies

Directions:

  1. Preheat oven to 350 Degrees F.
  2. In a bowl mash banana. Add eggs, coconut oil, pumpkin spice extract, cinnamon, clove and mix thoroughly.
  3. Add apple, carrots and dates and mix.
  4. Add oats and flax and mix.
  5. Lastly, mix in chocolate chips.
  6. Spoon onto sprayed baking sheet.
  7. Cook for 15 minutes.

  • 1 Cup Oats
  • 1/2 Cup Flax Meal
  • 3 Eggs
  • 1/4 Cup Coconut Oil
  • 1 Apple (chopped)
  • 2 Large Carrots (shredded)
  • 1 Banana (mashed)
  • 5 Dates (chopped)
  • 2 TSP Cinnamon
  • 1 TSP Clove
  • 1 TBSP Pumpkin Spice Extract (or vanilla)
  • 1/4 Cup Chocolate Chips
