Peanut Butter Banana Bites

Is there anyone in this world who DOESN'T like peanut butter? Well, if that person exists, then I like it enough for the two of us. So much so that I had to quit buying it do to lack of self restraint and over consumption.

I've been needing a little healthy, sweet something lately and the peanut butter magically ended up in my grocery cart. HARPER?!?! (my innocent 7 month old ;)) The second I got home from the grocery store, I began creating what I thought would become the perfect little peanut butter ball. Because peanut butter balls are much better than a spoon full from the jar...

Anyways, I'm in between bachelorette parties (3 friends marrying off, 3 consequetive weekends and I'm lucky enough to be in all of them!) and forced myself into a sabbatical of no ADDED sugar, no alcohol and no dairy. I did this for several reasons. For one, when I take out those 3 things from my diet I FEEL SO MUCH BETTER! Two, I'm all for moderation and balance, and during the bachelorette parties I'm definitely over doing my share of alcohol, junk food, sweets, etc! So, during the week, I choose to stay on track. Three, I like a challenge.

And a challenge this is. I'm 9 days strong on no alcohol, sugar or dairy and my sweet tooth knows it. That little devil tried to veer me off track but I was saved by the Peanut Butter Banana Bites.

Add honey, maple syrup, agave or something else to your liking if you feel they won't be sweet enough for you. I proudly make the majority of my sweet treats without the sugars. For the record, honey = sugar. Agave = Sugar. Maple syrup = Sugar. Sugar = Sugar. I like to stick to fruit to sweeten things up. Fruit has sugar, yes, but fruit also has vitamins, minerals, fiber and so many other health benefits. Remember, when I talk about sugar, I'm talking about ADDED sugar. 

I digress. 

Peanut Butter Banana Bites. Bursting with peanut butter, subtle hints of banana, chewy bits of dates, making it the perfect, healthy, snack! 

Prep: 5 minutes

Servings: 10

Directions:

  1. In a bowl mash banana.
  2. Mix in peanut butter and chopped dates.
  3. Add Vanilla.
  4. Add dry ingredients: flax meal, coconut flour, almond flour.
  5. Mix together and roll into little balls.
  6. Keep refrigerated.

Ingredients:

  • 1/4 Cup Peanut Butter
  • 1 Banana
  • 5 Dates
  • 1/4 Cup Flax Meal (buy here)
  • 1/4 Cup Coconut Flour (buy here ON SALE!)
  • 1/2 Cup Almond Flour (buy here)
  • 1 TSP Vanilla
