Pumpkin Spice Balls

If Starbucks can bring back the pumpkin spice latte prematurely, then I can begin creating all the tastes of fall. This recipe is brought to you by a can of pumpkin and what was left in the cabinets from my other baking escapades. 

Flavors of fall, cinnamon spice, vanilla, white chocolate, coconut and pumpkin rolled up into scrumptious, bite size balls. The only downfall to this mouthful of heaven is the difficulty in having just one. Luckily, they are 100% healthy so seconds and thirds are completely acceptable. In fact, please make me feel better about the fact that I scarfed down 5 within the first 5 minutes of having made them! 

I love to recipe create based on flavors and availability of produce based on seasons and fall happens to be one of my favorites. It's finally time to bring back the pumpkin, sweet potatoes, chili and harvest soups. Stay tuned for more tastes of fall! 

Prep Time: 10 minutes


  1. In a bowl mix together pumpkin, cinnamon, vanilla, peanut butter, agave.
  2. Finely chop dates and add to the mixture.
  3. Add in White Chocolate Chips and Coconut. 
  4. Mix in Rolled Oats.
  5. Make into small balls and roll in coconut if desired!




  • 1 can Pumpkin
  • 2 cups Rolled Oats
  • 1 TBSP Cinnamon
  • 1 TBSP Vanilla
  • 8 finely chopped Dates
  • 1/4 cup Shredded Coconut
  • 1/4 cup Peanut Butter
  • 1/4 cup White Chocolate Chips
  • 2 TBSP Agave (optional)
