Pineapple Jalapeno Quinoa

Quinoa gets this bad rep for being boring and bland... and that's clearly just a lack of creativity and cooking skills! Quinoa is fun, versatile, and full of nutrients everyone can benefit from! I often use quinoa in the place of rice for the sole reason that it's a complete protein and offers more vitamins and minerals than rice.

I have this filed under "main courses" but it could easily be used as a side dish too! I'm a vegetarian and my husband is 100% carnivore, so I will typically have a larger portion as my meal and serve it to him as a side with his steak! I'm all about fast, easy and little mess! 

Did I mention this is a one pot recipe? That means one pot for everything. That means only one pot to clean. That means easy! And really, it makes itself.... because that "one pot" is a RICE COOKER! Anyone else out there love to set the cooker and forget about it?! My biggest pet peeve with food bloggers is that they make all these amazing looking recipes.... THAT TAKE SERIOUS TIME AND TALENT. Well, I don't have time (I know, I know... roll your eyes at this stay at home mom) or talent but I do have a creative palate and a good sense of flavor. 

I guess what I'm trying to say is, ANYONE can make this and make it GOOD! It's really easy and ready in about 20 minutes. Annnnnnd, it's even better as a left over (I like it served cold!). 

If you're wondering what the nutritionist is eating for lunch this week, Pineapple Jalapeño Quinoa is it! Today I'm adding a side of tofu because yesterday's portion didn't quite cut it! 

Prep Time: 5 Minutes

Cook Time: 20 Minutes

Servings: 3-4

Directions:

  1. 1 cup Quinoa + 2 cups water in rice cooker and turn on. 
  2. While quinoa is cooking, chop pineapple, red onion, jalapeños and cilantro and set aside.
  3. Measure out and mix jalapeño juice, soy sauce, pepper and salt together. 
  4. Once quinoa is cooked, add spinach right away and mix. 
  5. Add all chopped vegetables and mix.
  6. Add liquid mixture and mix. S
  7. Serve right away or store in fridge and serve cold (my favorite!). 

Ingredients:

  • 1 Cup Quinoa
  • 1/4 Pineapple chopped
  • 1/4 Red Onion chopped
  • 1/4 Cup Green Onions chopped
  • 1/4 Cup Diced Jalapeños 
  • Cilantro To Taste
  • 1/2 TSP Black Pepper
  • 1/2 TSP Seasoning Salt
  • 1/2 Lemon squeezed
  • 2 TBSP Jalapeno juice (from jar)
  • 1 TBSP Gluten Free Soy Sauce
  • 1 Handful of Spinach
