I'm still going to say that my margherita pizza is hands down the best "healthy" pizza I've conquered, but if you're looking for gluten-free or low carb option, this coconut flour pizza crust was just enough to hit that spot! I mean, if we're going with 100% guilt free, then this crust is where it's at!
I've made this a few times now, altering the recipe each time until I got it juuuuust right. My taste buds think it's delicious, my husbands taste buds haven't screamed "THIS IS AMAZING" but he's polished his plate clean each time which is HUGE! And while I haven't begged for compliments, I've received no complaints which leads me to believe we can put this on the regular pizza night rotation.
What makes this bread-like, pick-up-able (word?) and as close to healthy pizza crust as you're going to get is the egg, which is a main ingredient. With that being said, if my palate works hard enough, it can detect subtle egg flavor.
So, pizza and netflix on Friday? No problem and no cheat day necessary. You might even have room for popcorn!
It's date night tonight for us, but the baby sitters taste buds are going to be blessed with coconut flour pizza goodness tonight! LUCKY THEM!
Prep Time: 10 minutes (15 if you're making my homemade pesto!)
Cook Time: 16-18 Minutes
- Preheat oven to 500 degrees F with the pan you're going to make pizza on in oven.
- Once preheated, remove pan, add crust mixture to pan.
- Bake for 8 minutes.
- Remove crust, add toppings, bake for another 8-10 minutes.
- 4 Eggs
- 1/4 Cup Coconut Flour
- 1 TBSP Minced Garlic
- 1 TBSP Pesto
- 1 TSP Pepper
- 1 TSP Italian Seasoning
- 1/2 TSP Salt
- 1 TBSP Olive Oil
