Curried Kale Lentil Soup

Anything dowsed in bold curry flavor is enough to get my mouth-watering! This flavorful soup is packed with protein, nutrients and anti inflammatory properties {thank you garlic, turmeric and curry powder!}. The lentils provide enough substance to make this dish filling, yet leave you feeling light. Garlic, turmeric, and kale (when cooked) are great for your digestive system. For the amateur cook, fear not. You can make this with your eyes closed. One dish, hardly a single utensil, easy clean up, minimal ingredients. You really can't mess this up. 

Prep Time: 5 Minutes

Cook Time: 25 minutes

Servings: 4-5

Directions:

  • Combine red lentils and water on a stove top pan and bring to bowl.
  • Add curry powder, turmeric, garlic salt and minced garlic and let simmer until lentils are cooked (~20 minutes).
  • Once they are cooked, add in chickpeas and kale and cook for additional 5 minutes.
  • Let cool and serve!

  • 1 Cup Red Lentils
  • 4 Cups Water
  • 1 TBSP Minced Garlic
  • 3 Cups Shredded Kale
  • 1 Can Chickpeas
  • 1/8 TSP Turmeric
  • 1 TSP Curry Powder
  • 1/2 TSP Garlic Salt
