Healthy Pesto Margherita Pizza

When you're 9 months pregnant date nights turn into no make-up, hair in a bun on the top of your head, game night (ticket to ride) and homemade pizza for dinner. I'd be lying if I said I wasn't satisfied with our now traditional Saturday night. Except that my husband is a board-game cheater and won on a false play.. but we'll get into that at another time! But seriously, if you haven't played Ticket-to-Ride, you're really missing out- such a fun game that can be played with up to 5 people but also totally do-able with only two. We love it! 

As for the homemade pizza.... to die for! I've made this before and after two unsatisfying pizza experiences (from two different places!) I decided homemade is the way to go. From the dough all the way to the sauce, I know exactly what is in it. All fresh ingredients and truthfully not THAT unhealthy (aside from being a bit carb heavy). 

It can be a little time consuming.. especially if you're making the dough from scratch (and I wouldn't suggest it any other way) however, it can be a fun thing for two people to do together! Bribe the other half with a 6 pack and you've got all hands on deck!

The dough recipe is the only thing that I can't pin as mine... I got it from here. It is seriously so good that I don't even try to alter it or experiment to make my own... it's perfect the way it is. It makes enough for 2 very large pizzas, so unless you're having an army over for dinner, I suggest making the full batch and making a homemade frozen pizza for another night. I prepared two whole pizzas and then surran wrapped one in a pan and stuffed it in the freezer for a night when I'm feeling too lazy to cook (like after baby Harper comes and I'm hardly functioning!). Nothing better than a guilt-free homemade pizza to pop in the oven for 20 minutes and call it good!

 

Prep Time: 20 minutes + 40 minutes for dough to rise

Cook Time: 16-20 Minutes

Preheat Oven 450 F

Pesto Sauce:

  1. While waiting for the sugar and yeast to dissolve in warm water for the dough, start the pesto sauce.
  2. Place all ingredients in blender (I use my Ninja!) and blend until smooth and creamy. May need to add water or oil based on consistency. 
  3. Set aside.

**At this time you will want to finish the dough recipe.

Toppings: 

  1. Once dough is ready, add layer of pesto sauce to dough.
  2. Add layer of Spinach. 
  3. Add Mozzarela cheese, Tomatoes and Basil.

Pesto Sauce:

  • 1.5 Cups Packed Basil
  • 1/2 Cup Raw Almonds
  • 1 Lemon
  • 1/4 Cup Olive Oil
  • 1/4 Cup Water
  • 1 TBSP Minced Garlic
  • 1 TSP Garlic Salt

**You may need to add water or olive oil depending on willingness to blend

Toppings:

  • 3 Cups Mozzarella Cheese (more if desired)
  • 2 Roma Tomatoes
  • 1/2 Cup Fresh Basil Leaves
  • 2 Cups Spinach
 

Bake at 450 F for roughly 16-20 minutes!
