For those who don't know, I'm a pescatarian married to a complete carnivore. In my kitchen, that means 2 meals being prepared always! To minimize my ingredients, clean up and time but maximize my husband's happiness, I strive to make very similar dishes, one with meat/poultry and one with seafood (salmon being my go-to!). Last night's dinner was delicious! A little bit of mexican spice, tamed by fresh pico de gallo.
Mexican happens to be one of my absolute favorite ethnic foods. The only problem is... when I go out for Mexican food, I practically eat my weight in chips, salsa and guacamole then proceed to try and finish off my main dish as well... leaving my pants unbuttoned and about 1000+ calories over my daily "budget". So, with that being said, I shy away from Mexican restaurants and opt to make my own healthy twist on a meal of my craving. This one is particularly light, easy to make and extremely tasty! You'll even be able to keep your pants buttoned!
If you're looking for simple, you've found it. I think I spent a max of 35 minutes in the kitchen preparing this dinner.. and for me.. that's like record timing! If you're new to cooking, keep in mind, it is something you have to MAKE TIME for but the health (and money saving) benefits and completely worth it! Prep Time: 10 Minutes
Cook Time: 25 Minutes (depending on thickness of chicken)
- Tenderize raw chicken. I use this meat tenderizer, but any will do! And if you don't have one, poke holes in chicken with a fork!
- Place raw chicken in bowl.
- Add lemon, lime, olive oil and spices.
- Mix evenly over chicken.
- Let marinate in refrigerator (time permitting).
- Bake at 400 degrees for 25 minutes.
- Serve with Pico De Gallo over it!
- Chicken (4 breasts, halved)
- 1/2 tbsp Mexican Spice (Sprouts)
- 1/2 tbsp Garlic Salt
- 1/2 tbsp Pepper
- 1 Lemon
- 1 Lime
- 2 tbsp Olive Oil
- Pico De Gallo
