Guacamole Shrimp Tacos

Tuesday's are for tacos... Guacamole Shrimp Taco's in the Chupinsky house hold to be exact. You never really need an excuse to eat tacos but if I could come up with a really good one, Tuesday would be it. I mix it up between shrimp, beef, chicken, salmon, quinoa, bean, etc. I'll turn anything into a taco. It's also a great excuse to have chips and guacamole or salsa.. or both.

The taco part of this recipe is about as simple as it gets and requires very little... but what really makes these tacos is the guacamole and salsa that go on top! Those recipes are for amateurs too, so don't shy away at the fear of this recipe being too labor intensive... it's not! Seriously, I make everything these days with one hand as there's usually a sleeping baby in the other! 

These were inspired by my new go-to seasoning.. lemon pepper. I just can't seem to get enough! I've been putting it on EVERYTHING (as you may have already noticed). 

Prep Time: 15 minutes (including guacamole & salsa)

Cook Time: 5-10 minutes (if you use pre-cooked shrimp)


  1. In a bowl marinate shrimp in all ingredients for as long as time permits up to an hour. 
  2. Put ingredients in skillet and cook over low heat for 5-10 minutes. 
  3. While shrimp is cooking, heat up corn tortillas (over stove, in microwave or in oven). 
  4. Stuff shrimp in tortillas. Top with guacamole, salsa and feta cheese. 



  • Shrimp (8oz)
  • 1 TSP Lemon Pepper
  • Lemon
  • Lime
  • 1 TBSP Olive Oil
  • 1/2 TSP paparika
  • 1/2 TSP Coriander 
  • Feta Cheese 
  • Guacamole
  • Salsa
