I have this thing about adding vegetables to my smoothies that I don't normally eat. To me, a jar full of vegetables is like an insurance policy. Maybe you'll get plenty of vitamins and minerals through your meals, but just incase you don't, a protein smoothie is a sure way to hit your veggie quota for the day!

So, bottoms up, friends!

This is an earthy, yet sweet blend of fruits and vegetables. If you haven't figured it out by the name, the main vegetable is BEETS! I know, you're scared, right? Don't be. I've added just enough fruit to tame the flavor and you'll still reap the benefits beets.

But WHYYYYY beets?

  • High in vitamin C. Kiss that crappy immune system good-bye.
  • Loaded with fiber. Don't ya wanna beat constipation? {see what I did there?}
  • Full of nitrates which increase circulation and help regulate blood pressure, enhance stamina and makes you smarter.

So, just suck it up and suck it down if you don't like beets because they LOVE you!

  1. Put in blender and blend on high until smooth.
  2. Serve!

  • Generous Handful of Spinach
  • 1 Banana
  • 5 Strawberries
  • 1 Beet (reduce to 1/2 if you REALLY don't like beets)
  • Ice
  • 1 Cup Liquid {water, non-dairy milk, milk}
  • 1-2 servings of Protein Powder

If you're going to be hardcore about this smoothie thing, I would invest in a good blender. I press blend, leave it for a few minutes while putzing {I love that word} around the kitchen, come back and you can't so much as see a particle of spinach. Now you know my secret to getting my husband to eat his vegetables. There are tons of great blenders out there, Vitamix, Blendtec and the one I swear up and down by... Ninja! I've had mine for nearly 5 years and it still works like I got it yesterday. One of my favorite, most used investments {except that I got it as a gift}.
