PINEAPPLE-CARROT

Carrots? Pineapple? Mixed together? I know, not your typical smoothie. But, if you'd remember, we're focusing on adding VEGETABLES to our smoothies and this blend was my pregnant craving jam! Turns out though, pregnant or not, I like it regardless. So, this week it's making it's debut! 

This breaks up the usual banana, spinach, berry smoothie and adds lots of fun nutrients into your diet that you might not eat otherwise! Any time I suggest pineapple in anything I get this kick back saying, "But pineapple has so much sugar in it!" Trust me, I'm aware. But did you know that pineapple aides in digestion? Helps prevent cancer? Has huge amounts of potassium, copper, manganese, magnesium, vitamin C and fiber? Oh and lets not forget about bromelain. Bromelain is a mixture of enzymes that help with digestion, BUT it is also known to help initiate contractions during pregnancy. Yep, I ate a whole pineapple about 2 days before going into labor with little miss Harper love. 

So, the benefits of pineapple completely outweigh the grams of sugar! Trust me, this smoothie isn't going to make you tip the scale. Quite the contrary, actually! 

I typically cut up the entire pineapple and separate it into baggies with the carrots. In the morning I toss the bag of goodies in the blender, add some spinach (you didn't think I'd really for-go greens did you?), protein powder, ice, milk.... BAM. Breakfast at your finger tips! 

Last week I started the Arbonne 30 Day Healthy Living Challenge, so I'm actually adding their detox products to my smoothie as well, which gives it even more delicious flavor. Since I kicked off January with a smoothie challenge (subscribe for all the details!) I decided to supplement it with as much of a detox my body could withstand while breastfeeding. It's been a fun little challenge to clean up my diet (even more so) and take this smoothie challenge a little further! 

Prep & Clean: 5 minutes (so, no excuses!)

Servings: 2

Directions:

  1.  I always prep my pineapple and carrots into baggies on Sunday so it's all measure and ready to dump
  2.  Add all ingredients & press blend
  3. Consume immediately or pack it for a snack or lunch! 

Ingredients: 

  • 1/4 Pineapple
  • Handful Baby Carrots
  • 2 cups Spinach
  • 2 Servings Vanilla Protein Powder (I'm current using Arbonne because I'm doing their Healthy Living Challenge)
  • 1-1.5 cups Almond Milk (I always forget Almond Milk at the store so often times I use water)

I know there are about a million smoothie recipes out there and you can get much more creative than this. I try to focus on quick and easy. I usually have a baby on one hip, ingredients and blending with the other hand and somehow simultaneously pouring my husbands coffee as I'm rushing him out the door. 

I hope everyone is still standing strong with the smoothie challenge for 2017! Is it just me or does drinking a cup of vegetables just make you feel so pure? Either way, more vegetables is ALWAYS a good idea!
